I do believe that a gluten free diet would benefit children on the spectrum. Gluten is a toxic &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_1"&gt;protein&lt;/span&gt; for everyone. We cannot digest it properly and thus &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_2"&gt;chaos &lt;/span&gt;&lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_3"&gt;erupts&lt;/span&gt;! I cannot tell you how many people I have met that have children on the spectrum and also have &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_4"&gt;celiac&lt;/span&gt; disease. I believe there is a connection. My own son has spectrum issues.&lt;br /&gt;&lt;br /&gt;I believe 30% of all Americans carry these &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_5"&gt;celiac&lt;/span&gt; genes. Wouldn't it be something if we could find out what specific genes these children on the spectrum have in &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_6"&gt;common!&lt;/span&gt; I also believe that the genes are triggered by the vaccination schedules. I am not against &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_7"&gt;vaccinations&lt;/span&gt;, however, I would suggest that you develop your own schedule and ask the doctors to &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_8"&gt;separate&lt;/span&gt; them (especially the &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_9"&gt;MMR&lt;/span&gt;). They can do this, but this is &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_10"&gt;inconvenient&lt;/span&gt; for the doctor. Do what you know your GUT is telling you! (No pun intended)&lt;br /&gt;&lt;br /&gt;Many parents say that the &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_11"&gt;GF&lt;/span&gt; diet doesn't work for their children. If you cheat once in a while and give them a gluten-filled snack, it won't work. Also, you may not be aware of the &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_12"&gt;hidden&lt;/span&gt; gluten-containing ingredients in everyday foods- Rice &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_13"&gt;Krispy&lt;/span&gt; treats have malt flavoring (malt is made from barley and that contains gluten!)&lt;br /&gt;&lt;br /&gt;You may be toasting their &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_14"&gt;GF&lt;/span&gt; bread in the same toaster that you toast your Wonder bread. This is a cross-contamination issue. Crumbs can contaminate the &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_15"&gt;GF&lt;/span&gt; bread etc...&lt;br /&gt;&lt;br /&gt;If you are going to try a GF diet for your child on the spectrum, you need to educate yourself on the hidden gluten containing ingredients, why you can not cheat, and possible cross contamination issues in your kitchen.&lt;br /&gt;&lt;br /&gt;I have not mention casein free (CF) information because I do not know enough about this to share. Don't assume the &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_1"&gt;pharmacist&lt;/span&gt; or doctor will know.  My experience is that they do not know and it is up to you to find out. I tried the Chili Mac and it was fantastic. This weekend we are celebrating my husband's birthday and Father's day, so we were looking for a GF friendly restaurant. I thought Red Robin was okay, you can get a burger wrapped in lettuce and the french fries are fried in a dedicated frier (no Red Robin seasonings on either). In fact, I ate there last week and had the above items without and outwardly ill effects, so that is why I suggested it.&lt;br /&gt;&lt;br /&gt;Shame on me for not reading the fine print on the GF menu. I have heard trhough the GF circles that they will prepare you a fine gluten free meal ( with rice pasta!) They do not have a gluten free menu per s&lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_1"&gt;e&lt;/span&gt;, however, I was treated very well. The manager knew I needed a gluten free meal (I called ahead-and requested this when I made my reservation). I when it comes to gluten free dining it seems that the Lettuce Entainment Restaurants (Wildfire, Maggiano's, PF Changs...) are two steps ahead of the other restaurants!&lt;br /&gt;&lt;br /&gt;The head chef came to my table and asked me what I would like. We discussed her recommendations and I chose the linguine rice pasta with &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_2"&gt;Alfredo&lt;/span&gt; sauce, shrimp and &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_3"&gt;broccoli&lt;/span&gt;. She also showed me a yellow ticket that was &lt;span style="color:#ffff00;"&gt;attached &lt;/span&gt;to my order warning all kitchen staff of a gluten alert (she called it an allergy...).&lt;br /&gt;&lt;br /&gt;Even though I could not partake in the bread being dipped in olive oil, I was happy with &lt;em&gt;my &lt;/em&gt;bottle of red wine! Everything was great! Sometimes I am made to feel ashamed of my illness.  It seems to &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_0"&gt;embarrass&lt;/span&gt; some members of my family.  This is very sad, and I'm struggling to deal with it.  That is why it is important for &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_1"&gt;Celiac's&lt;/span&gt; to have a support system. Ironically, these chips are distributed by Plocky's Fine Snacks NatureStar Foods Inc, in Hinsdale Illinois. Why haven't I seen these before? I tried the Roasted Red Pepper Hummus Chips. They are a nice alternative to corn and rice chips. There are no trans fat, gluten free and certified kosher. I choose this establishment based on the excellent selection of &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_1"&gt;&lt;span class="blsp-spelling-error" id="SPELLING_ERROR_1"&gt;GF&lt;/span&gt;&lt;/span&gt; entrees and their supposed knowledge of &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_2"&gt;&lt;span class="blsp-spelling-error" id="SPELLING_ERROR_2"&gt;GF&lt;/span&gt;&lt;/span&gt;/&lt;span class="blsp-spelling-error" id="SPELLING_ERROR_3"&gt;&lt;span class="blsp-spelling-error" id="SPELLING_ERROR_3"&gt;Celiac&lt;/span&gt;&lt;/span&gt; needs. It started out fine and quickly went downhill.&lt;br /&gt;&lt;br /&gt;I made the reservation online and explained that I needed a &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_4"&gt;&lt;span class="blsp-spelling-error" id="SPELLING_ERROR_4"&gt;GF&lt;/span&gt;&lt;/span&gt; menu and that I had &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_5"&gt;&lt;span class="blsp-spelling-error" id="SPELLING_ERROR_5"&gt;Celiac&lt;/span&gt;&lt;/span&gt; Disease. We arrived and I was given the menu and escorted to the table. I explained to the waitress that I had &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_6"&gt;&lt;span class="blsp-spelling-error" id="SPELLING_ERROR_6"&gt;Celiac's&lt;/span&gt;&lt;/span&gt; and that I was dining gluten free. She seemed to know what I was talking about. This is where the problems began. I &lt;strong&gt;&lt;em&gt;ASSUMED&lt;/em&gt;&lt;/strong&gt; she knew what was gluten free and what wasn't and that my dining experience would be fine.&lt;br /&gt;&lt;br /&gt;Note: We arrived at 11:45 am for our reservation. When it was all over it was close to 2 pm. When dining gluten free it always takes much longer! Little things make a world of difference. What may seem like no big deal to a waitress/waiter or manager, the attitude of the staff can ruin a dining experience.&lt;br /&gt;&lt;br /&gt;I ordered the &lt;em&gt;F&lt;span class="blsp-spelling-error" id="SPELLING_ERROR_7"&gt;&lt;span class="blsp-spelling-error" id="SPELLING_ERROR_7"&gt;ilet&lt;/span&gt;&lt;/span&gt; Medallions O&lt;span class="blsp-spelling-error" id="SPELLING_ERROR_8"&gt;scar&lt;/span&gt;&lt;/em&gt; and the Wildfire chopped salad. I was served the salad with an vinegar and oil dressing. I was told by her that this was the only dressing I could have. I explained to her that the ranch was listed on the &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_9"&gt;&lt;span class="blsp-spelling-error" id="SPELLING_ERROR_8"&gt;GF&lt;/span&gt;&lt;/span&gt; menu and that I would like to have that. She then said, "Oh, I think we have &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_10"&gt;&lt;span class="blsp-spelling-error" id="SPELLING_ERROR_9"&gt;GF&lt;/span&gt;&lt;/span&gt; bread. Would you like some?" I said yes and 10 minutes later I was given a toasted roll without butter. I asked for butter and she said, "Oh you cannot have our butter. It has something in it you cannot have." She walked away. I looked at my husband and said, "Pure whipped butter doesn't contain gluten!" &lt;em&gt;It was her attitude and ignorance that made me upset.&lt;/em&gt;&lt;br /&gt;&lt;br /&gt;I was then told 20 minutes later that they could not make the sauce for my dinner (they do not make it until after 4 pm) and that they would just give me the &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_11"&gt;&lt;span class="blsp-spelling-error" id="SPELLING_ERROR_10"&gt;filet&lt;/span&gt;&lt;/span&gt;-which I really didn't want, but accepted. When my &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_12"&gt;&lt;span class="blsp-spelling-error" id="SPELLING_ERROR_11"&gt;filet&lt;/span&gt;&lt;/span&gt; came, I asked for some steak sauce and was told they didn't have any steak sauce that was gluten free. I knew they had A-1 and there are no gluten containing ingredients in A-1. This is when I asked to speak to a manager.&lt;br /&gt;&lt;br /&gt;The assistant manger came over and explained that the waitress was new and that she made a mistake. He also said I could have the butter. I told him I was disappointed and I specifically choose this restaurant because it was supposed to be &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_13"&gt;&lt;span class="blsp-spelling-error" id="SPELLING_ERROR_12"&gt;GF&lt;/span&gt;&lt;/span&gt; and &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_14"&gt;&lt;span class="blsp-spelling-error" id="SPELLING_ERROR_13"&gt;Celiac&lt;/span&gt;&lt;/span&gt; friendly. I asked him why they have not trained ALL of their staff on &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_15"&gt;&lt;span class="blsp-spelling-error" id="SPELLING_ERROR_14"&gt;GF&lt;/span&gt;&lt;/span&gt; dining and that is when he became a little defensive. &lt;em&gt;His attitude had changed from friendly to defensive&lt;/em&gt;. If you have had a similar experience when trying to dine &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_15"&gt;GF&lt;/span&gt;, you just want to cry and I did! I had lost my appetite and my birthday &lt;em&gt;dinner &lt;/em&gt;was ruined.&lt;br /&gt;&lt;br /&gt;At this point, my son was done and wanted to go, my husband seemed a little upset and I didn't want to be there anymore. I wrapped my own steak to go and my son and I headed for the door while m&lt;span class="blsp-spelling-error" id="SPELLING_ERROR_16"&gt;y&lt;/span&gt; husband, unknown to me, had a second conversation with the main manager, Tim Mahler, who admitted fault and was &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_18"&gt;apologetic&lt;/span&gt;.&lt;br /&gt;&lt;br /&gt;He adjusted the bill, which was nice, but my birthday dinner was a &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_19"&gt;disappointment. Why? It was&lt;/span&gt; the &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_16"&gt;initial&lt;/span&gt; attitude and ignorance of the wait staff that ruined the experience. It seems management is not &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_20"&gt;training &lt;/span&gt;ALL employees on what it means for the customer to have a &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_22"&gt;&lt;span class="blsp-spelling-error" id="SPELLING_ERROR_17"&gt;GF&lt;/span&gt;&lt;/span&gt; dinning experience. Open 7 days for lunch/dinner.This is the kind of place you dream about. The entire staff is very aware of dining GF.&lt;br /&gt;&lt;br /&gt;They use color coded pans, utensils, dedicated oven and Chef is very detailed on the issue.I have been there twice and both times my seafood entrees were perfect. Nice selection of appetizers which include Garlic/Goat cheese pita (GF of course), crab salad, wonderful salads and very tasty french onion soup.Do not miss the exceptional Flourless Chocolate cake!The GF menu is classy and in addition to whats offered on the GF menu, dont overlook items on the regular menu. Many are already GF or can be made GF, and the Chef will advise you further.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Anthonys Italian Chop House&lt;/strong&gt;:Located at 1909 Spring Rd in Oakbrook (630 472-6000) in the Doubletree Hotel. Under the direction of CSA Executive Chef Aaron Flores. Open daily EXCEPT SUNDAYS from 5p-10p. This is a GF oasis for dining options and you will look forward to visit again. Chef Flores was in and he advised how they use a seperate cooking area and the staff undergoes extensive training on how to prepare GF meals.Another classy GF menu. They serve you some of the very best rolls, those I dined with wanted my rolls instead of thier bread.&lt;br /&gt;&lt;br /&gt;I had thier signature dish, Seafood Risotto and it was fantastic. The menu offers a variety of options with a Mediterranean flair and Chef Flores updates the choices. I did notice GF brownies and other dessert items listed.The Atrium Cafe (did not try) is open daily for bfast/lunch and I was informed offers a GF menu. My intentions are to send out an email several times a month with Restaurant Reviews. I have heard great things about this restaurant from people in my gluten-free support group. I downloaded the menu, called ahead and talked with the manager and chef John Brandou. I asked the usual questions regarding cross-contamination issues in the kitchen. I was assured that the pasta was gluten-free (they use Tinky'ada) and they use a separate pot and tongs. John was a delight to talk to and he was well aware of my dietary needs.&lt;br /&gt;&lt;br /&gt;I was so excited when my meal came to the table! I ordered Farfalle Alfredo which had grilled chicken, GF spinach pasta, roasted red peppers, crispy Italian cured ham, sauteed red onion and peas tossed in an alfredo sauce with asiago cheese. It was so delicious ans creamy that I ate the whole thing! For dessert I had the raspberry sorbet which was very nice too!&lt;br /&gt;&lt;br /&gt;Call ahead for a reservation 630.428.8500. What Kris and her husband discovered is scary-so please be aware that if you choose to eat out at ANYWHERE, there is ALWAYS the possible (and probable) cross contamination issues! I have eaten the GF pizza at Aurelios, and did not have any outward reactions, &lt;strong&gt;but that doesn't mean that I didn't ingest gluten due to cross contamination issues.&lt;/strong&gt;&lt;br /&gt;&lt;strong&gt;&lt;/strong&gt;&lt;br /&gt;All Aurelio's locations now carry a gluten- free personal size pizza. I have had the gluten-free pizza in Frankfort, IL, and was told by fellow celiacs that other locations were now carrying them. I recently wrote to Aurelio's and "John" from the Aurelio's Team told me that all locations now serve gluten - free pizza.&lt;br /&gt;&lt;br /&gt;It has been rumored that a member of the Aurelio's Team has a relative with Celiac Disease and that is why they developed a gluten- free pizza. The pizza is good and the crust is thicker than what I like. If Aurelio's could use the same thin crust that Foods by George uses for their pizza, they would have a real winner.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;I am not sure how each location handles cross contamination issues. Are they using a separate spoon and sauce bowl? Do they change gloves or wash their hands before they make the gluten -free pizza? Can they assure us that all ingredients are safe and have not come into contact with any wheat (gluten)? It seems that pharmacists are not as well educated when it comes to being able to identify a gluten containing ingredients in medicine. Many manufacturers will use a starch that contains gluten as an inactive ingredient. I discovered that the generic brand of medicine that I take does contain gluten, but the name brand does not. Needless to say, I was mortified and disappointed. I feel that the Gluten Free Drug site &lt;a href="http://www.glutenfreedrugs.com/"&gt;http://www.glutenfreedrugs.com/&lt;/a&gt; is a beginning to finding out if the medicine you might be taking is gluten - free. &lt;strong&gt;It is always best to call the drug manufactuer to make sure.&lt;/strong&gt; The book, The Gluten Free Bible by Jax Peters Lowell, lists the top GF drugs and the manufacturer's phone numbers. Please educate your pharmacist on your findings.&lt;br /&gt;&lt;br /&gt;As for vitamin supplements, which are not regulated by the FDA, I would suggest that you call the manufacturer and request a note stating that the product is gluten-free. If they will not provide one, don't use it!&lt;br /&gt;&lt;br /&gt;Many people living with celiac disease choose to take over -the- counter supplements to help support their immune system. I take Juice PLUS, which is tested regularly using the Tepnel ELISA methodology for the presence of gluten. The results show that Juice PLUS is less than 20 parts per million gluten. (The company will supply you with a statement at your request. ) Juice PLUS is also recommended by a lot of doctors, including renowned pediatrcian, Dr. William Sears. It was also featured in Oprah's magazine as being one of the best supplements.&lt;br /&gt;&lt;br /&gt;Testing at 20 parts per million will soon be the new American standard in order for a product to be labeled gluten-free. I highly recommend this gluten-free whole-food supplement. It is the only product I trust and recommend for people with or without celiac disease. The organizers provided lunch for the vendors and I was able to request a gluten-free lunch. I was given a great salad, an apple and a small snack size bag of Mrs. May's Cashew Crunch. My goal is to provide factual information that will allow people to make informed decisions on local restaurants that are or attempt to be gluten-free.&lt;br /&gt;&lt;br /&gt;Cross contamination in the kitchen can occur when eating out. You need to be VERY careful. You can still have eaten gluten and may not have any outward reaction, so please be careful.&lt;br /&gt;&lt;br /&gt;The information shared on this website will have come from myself and other fellow Celiac's experiences.&lt;br /&gt;&lt;br /&gt;Eat out if you must, but always call ahead and talk to a manger and explain that you have celiac disease and cannot consume any gluten whatsoever! Remind your waitstaff of your condition and express your concerns about cross contamination in the kitchen etc. You will be able to tell by your conversation whether or not the restaurant can accomidate your needs. Trust your instincts and if you get a bad feeling, leave.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;These reviews are based on my own personal experiences:&lt;/strong&gt;&lt;br /&gt;&lt;strong&gt;&lt;/strong&gt;&lt;br /&gt;I give the following restaurants an &lt;strong&gt;A+&lt;/strong&gt; for knowledge of the disease, a gluten-free menu with variety, and great tasting food: &lt;strong&gt;Daluciano's.&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;I have dined at &lt;strong&gt;PF Changs&lt;/strong&gt; in Chicago last year for the annual University of Chicago Celiac Disease Fundraiser and I have also visited the Orland Park restaurant. I highly recommend the GF lettuce wraps. I give them an &lt;strong&gt;A-/B+.&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Ted Montana's Grill&lt;/strong&gt; in Bolingbrook gets a grade of &lt;strong&gt;B&lt;/strong&gt;. They did have a gluten-free menu, but it was missing and someone had to search for it. The menu choices were limited, but the waiter was very attentive and even asked me if I wanted the chef to come out to talk to me.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Red Robin&lt;/strong&gt; offers a bunless burger and gluten - free fries. I have eaten at several, but the service varies. They never have a gluten free menu available! Download your own from the internet. The menu is limited so they get a &lt;strong&gt;C-/D+.&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;I have never had a good experience at the Naperville &lt;strong&gt;Outback Steakhouse &lt;/strong&gt;. I have gotten sick twice! I'm not sure about the others in IL, but I will not dine there again. The servers did not have a clue about what the word gluten meant, even though I was assured by the manager before I walked in the door that I would be taken care of and that I shouldn't worry. They also did not have a GF menu ready when I arrived, even though I requested that it be there upon my arrival. I give them an &lt;strong&gt;D-/&lt;/strong&gt; at least they attempt to be gluten-free.&lt;br /&gt;&lt;br /&gt;I have not tried Adobo, Biaggi's or Vinci's yet. Fellow Celiac's that I trust have all had a positive experience.&lt;br /&gt;&lt;br /&gt;I know there are many more restaurants in the Chicagoland area that I have yet to try. I will find you! To put it simply, the body is attacking itself! It is NOT an allergy to wheat!&lt;br /&gt;&lt;br /&gt;Celiac disease is triggered by consumption of the protein called gluten, which is found in wheat, barley, rye and other grains like spelt, triticale and kamut.&lt;br /&gt;&lt;br /&gt;When people with celiac disease eat foods containing gluten, their immune system responds by damaging the fingerlike villi of the small intestine. When the villi become damaged, the body is unable to absorb nutrients into the bloodstream, which can lead to malnourishment.&lt;br /&gt;Celiac disease is also known as celiac sprue, nontropical sprue, and gluten-sensitive enteropathy.&lt;br /&gt;Researchers have determined that celiac disease is a genetic condition, meaning that it is inherited. In some cases, celiac becomes active or is triggered by events such as surgery, pregnancy, childbirth, viral infection, or severe emotional stress.&lt;br /&gt;&lt;br /&gt;Roughly one out of every 133 Americans has celiac disease, but 97% remain undiagnosed. This means that almost three million Americans have celiac disease and only about 100,000 know they have it.&lt;br /&gt;&lt;br /&gt;Left untreated, people with celiac disease can develop further complications such as other autoimmune diseases, osteoporosis, thyroid disease, and cancer.&lt;br /&gt;There are a number of medical problems that are associated with undiagnosed celiac disease including cancer, osteoporosis, diabetes Type 1, thyroid problems and reproductive health issues.&lt;br /&gt;&lt;br /&gt;What are the symptoms?&lt;br /&gt;The symptoms of celiac disease vary amongst different people. Some patients develop symptoms as early in life, while others feel healthy far into adulthood.&lt;br /&gt;Symptoms of celiac disease may or may not occur in the digestive system. For example, one person might have diarrhea and abdominal pain, while another person has irritability or depression. In fact, irritability is one of the most common symptoms in children.&lt;br /&gt;&lt;br /&gt;Some of the most common symptoms of celiac disease include:&lt;br /&gt;Bloating or Gas&lt;br /&gt;Diarrhea&lt;br /&gt;Constipation&lt;br /&gt;Fatigue&lt;br /&gt;Itchy Skin Rash&lt;br /&gt;Tingling/Numbness&lt;br /&gt;Pale Mouth Sores&lt;br /&gt;Joint Pain&lt;br /&gt;Delayed Growth&lt;br /&gt;Poor Weight Gain&lt;br /&gt;Thin Bones&lt;br /&gt;Infertility&lt;br /&gt;Headaches&lt;br /&gt;Depression&lt;br /&gt;Irritability&lt;br /&gt;Discolored Teeth&lt;br /&gt;&lt;br /&gt;Anemia, delayed growth, and weight loss are signs of malnutrition. Malnutrition is a serious problem for anyone, but particularly for children because they need adequate nutrition to develop properly. Failure to thrive during childhood development is a common indicator of celiac disease.&lt;br /&gt;&lt;br /&gt;Some people with celiac disease may not have symptoms or what is called asymptomatic. The undamaged part of their small intestine is able to absorb enough nutrients to prevent symptoms. However, people without symptoms are still at risk for the complications of celiac disease.&lt;br /&gt;&lt;br /&gt;How is celiac disease diagnosed?&lt;br /&gt;Accurately diagnosing celiac disease can be quite difficult largely because the symptoms often mimic those of other diseases including irritable bowel syndrome, Chron's's disease, ulcerative colitis, diverticulosis, intestinal infections, chronic fatigue syndrome, and depression.&lt;br /&gt;&lt;br /&gt;To gain a proper diagnosis of celiac disease, a physician will order the following blood tests:&lt;br /&gt;Total IgA&lt;br /&gt;IgA antitissue transglutaminase (tTG)&lt;br /&gt;IgA antiendomysial antibody immunofluorescence (EMA) (It is important to continue eating a normal, gluten-containing diet before being tested for celiac.)&lt;br /&gt;&lt;br /&gt;If the blood tests and symptoms indicate celiac, a physician may suggest a biopsy of the lining of the small intestine to confirm the diagnosis.&lt;br /&gt;&lt;br /&gt;What is the treatment?&lt;br /&gt;The only treatment for celiac disease is a lifelong gluten-free diet. A gluten-free diet means avoiding all foods that contain wheat (including spelt, triticale, and kamut), rye, and barley.&lt;br /&gt;Despite these restrictions, people with celiac disease can eat a well-balanced diet with a variety of foods, including bread and pasta. For example, instead of wheat flour, people can use potato, rice, soy, or bean flour. Or, they can buy gluten-free bread, pasta, and other products from specialty food companies.&lt;br /&gt;&lt;br /&gt;Safe gluten-free cooking substitutes:&lt;br /&gt;Brown Rice Flour&lt;br /&gt;Guar Gum&lt;br /&gt;Potato Starch&lt;br /&gt;Buckwheat&lt;br /&gt;Quinoa&lt;br /&gt;Aramanth&lt;br /&gt;Almond Flour&lt;br /&gt;Teff&lt;br /&gt;Corn Flour&lt;br /&gt;Tapioca Starch&lt;br /&gt;Soy Flour&lt;br /&gt;Xanthum Gum&lt;br /&gt;Corn Starch&lt;br /&gt;Potato Flour&lt;br /&gt;Sweet Rice Flour&lt;br /&gt;Lentil&lt;br /&gt;&lt;br /&gt;The gluten-free diet is a lifetime requirement for people with celiac disease. Eating any gluten, no matter how small an amount, can damage the intestine. This is true for anyone with the disease, including people who do not have noticeable symptoms. DO NOT CHEAT!&lt;br /&gt;&lt;br /&gt;&lt;a name="free"&gt;&lt;/a&gt;Following a gluten-free diet may seem difficult at first, but, with a little creativity, anyone can make delicious gluten-free meals!&lt;br /&gt;&lt;br /&gt;For example, plain meat, fish, rice, fruits, and vegetables do not contain gluten, so people with celiac disease can eat as much of these foods as they like. Places in the Chicagoland area that have the largest gluten free selections are Whole-Foods, Fruitful Yield, and Wild Oats. Other places, such as Meijer and Jewel have a small selection of gluten-free foods, but are getting bigger everyday. There are smaller stores in the Chicagoland area, but I haven't visisted them yet. There are also many online stores-just google gluten free foods.&lt;br /&gt;&lt;br /&gt;Support groups are particularly helpful for newly diagnosed people and their families as they learn to adjust to a new way of life. See others in the Chicagoland area listed on the blog.&lt;br /&gt;&lt;br /&gt;What Are The Complications of Celiac Disease?&lt;br /&gt;Damage to the small intestine and the resulting problems with nutrient absorption put a person with celiac disease at risk for several diseases and health problems:&lt;br /&gt;&lt;br /&gt;&lt;ul&gt;&lt;li&gt;&lt;br /&gt;Lymphoma and adenocarcinoma are types of cancer that can develop in the intestine.&lt;/li&gt;&lt;li&gt;&lt;br /&gt;Osteoporosis is a condition in which the bones become weak, brittle, and prone to breaking. Poor calcium absorption is a contributing factor to osteoporosis. &lt;/li&gt;&lt;li&gt;&lt;br /&gt;Miscarriage and congenital malformation of the baby, such as neural tube defects, are risks for untreated pregnant women with celiac disease because of malabsorption of nutrients. &lt;/li&gt;&lt;li&gt;&lt;br /&gt;Short stature results when childhood celiac disease prevents nutrient absorption during the years when nutrition is critical to a child's normal growth and development. Children who are diagnosed and treated before their growth stops may have a catch-up period. &lt;/li&gt;&lt;li&gt;&lt;br /&gt;Seizures, or convulsions, result from inadequate absorption of folic acid. I received the official diagnosis on January 5, 2007. Thank you Dr. Ali!&lt;br /&gt;&lt;br /&gt;My journey began in 2001 when I was having a difficult time becoming pregnant. I thought it was because it was related to my age (I’m an older gal), but now I know differently. Infertility and miscarriages are related to untreated celiac disease. I was told that I would miscarry at week 5. And by week 8 things did not look good. But by week 11, everything seemed to be okay….At 36 weeks, I delivered my first and only child, a healthy baby boy.&lt;br /&gt;&lt;br /&gt;I almost died after his birth. I started to hemorrhage. My placenta would not detach from my uterus and I lost over 40% of my blood. In order to save my life, the doctors needed to give me a life saving hysterectomy and blood transfusion. I was later told I had placenta accreta-( the doctors didn’t know this before I delivered). In retrospect, I believe this incidence was related to having undiagnosed/untreated celiac disease.&lt;br /&gt;&lt;br /&gt;It took almost 4 1/2 years to get my celiac diagnosis. I was told by doctors I was depressed and they all wanted to give me antidepressants to feel better. I knew it was much more than that, so after going to two endocrinologists, a chiropractor, and long conversations with my OB/GYN, nobody seemed to know what was wrong with me.&lt;br /&gt;&lt;br /&gt;Thank goodness for a weekend of overindulgences of gluten packed food - pizza and beer! I ended up in the emergency room with deliberating pain on my lower left side. I was given a CAT scan and some pain medication and was told to go home and make an appointment with a gastrointestinal doctor. That is how I met Dr. Ali (Edward Hospital in Naperville). He is probably the most caring and compassionate doctor I have ever met. As soon as I sat down in his office and told him my symptoms, he said that he was going to test me for celiac sprue. I said, “Celiac Who? What the hell is that?” Thank God he listened to me and correctly tested me for this disease.&lt;br /&gt;&lt;br /&gt;After my blood work confirmed the antibodies, I had a biopsy done (gold standard for celiac diagnosis.) The first biopsy was negative. My small intestine were fine. So, I just went on the assumption that I was gluten intolerant. Well, what do you know! Two years later I was diagnosed as having full-blown celiac disease! The villi in my small intestines were completely destroyed!&lt;br /&gt;&lt;br /&gt;Since January 5, 2007, I have concentrated on learning as much as I can about this disease. I have visited many websites, read books like Dr. Green’s -Celiac Disease-The Hidden Epidemic (a must for your library!) and consulted with a misinformed dietician.
